One of my favorite things to do is go into the kitchen and create something from my garden, experiment or just make some old favorites.
Today I made (Caribbean) green seasoning. Although I’ve made this a million times before, I still get excited because it’s never the same twice. I don’t really use a recipe and I use what I have growing in my garden. Today, I just so happen to have all of the ingredients in the amounts that I need. I like for scallions and chadon beni to be the largest proportion, somewhere between a third and a half. The other ingredients I like are thyme, lemon thyme, garlic chives, savory, and a mix of hot and seasoning or pimento (not hot) peppers.
This green seasoning is a multi purpose marinade, aromatic and condiment that adds a
depth and brightness to any dish. My favorite use for it is on a whole fish, like branzino, to be grilled. It can also be used in soups, curry, rice dishes, eggs, or pretty much anything.
I’m also excited because I’ll be moving to T&T and have been practicing making some local dishes like a proper Trini.
There’s no recipe but here’s what I used, in order of the highest percentage to the lowest. I just blended these in the food processor in olive oil and only a pinch of salt.
Scallions
Chadon beni (cilantro)
Garlic chives
Thyme
Lemon thyme
Savory
Trinidad seasoning peppers
Aji mango peppers
Shallots
Lime
